Three Easy Weeknight Dinners Your Kids Will Love + Links

Well, I'm trying to get in a routine but still feeling a bit like "The Little Engine That Could". One more child to get packed up and off and each day more progress happens. With most everyone getting back to school and that weeknight grind, I thought it would be the perfect time to share three quick and easy weeknight meals your family will gobble up. These were always a hit at our house. 

Also, it's a great time to start meal planning if you don't already. It was a lifesaver for me and you can read about it here and why I think it's so important on so many levels. With an empty nest, I'm not sure what will happen next...my plan will require a little editing for sure!

1. This Baked Ziti is a crowd pleaser. Make it ahead to pop in oven. Serve with a quick salad and a loaf of french bread and you are DONE! You can substitute the ground beef for sausage, a mixture of the two or use ground turkey. We always used the higher protein pasta as well! 

2. Salsa Verde Chicken. Serve it over rice or use it for tacos or burritos. The options are numerous.  Literally just toss these ingredients in the crock pot and move on. Perfect those those nights you seem to be shuttling kids all over and have no idea how you will fit dinner in!  I prepare a lot of recipes from Skinnytaste. She is a great follow if you don't already follow along.

3. Sheet Pan Ranch Pork Loin + Broccoli. I love any meal that cooks on one pan. It really doesn't get any easier, clean up is always a snap and always means fresh ingredients. Serve a salad...or not! This is really all you need!
